Just wanted to show an article from the Chicago Tribune about a pumpkin shortage posted today 10/8/15 due to record rainfall in June.

"once we ship the remainder of the 2015 harvest, we'll have no more Libby's pumpkin to sell until harvest 2016."

I heard this on the news yesterday so if you use canned pumpkin now is the time to buy. I love pumpkin spice coffer creamer but so do many other people. I usually buy several and put in freezer. I bought two at Wegmans and cannot find any more and its not even holiday time?

So I found several recipes for pumpkin spice coffee creamer on the net. Many of them have maple syrup and I cannot stand that flavor. So for you cooks do you think it would be ok to just leave it out? [Users must be registered and logged in to view attached photos or hyperlinks]

I'm what I like to call a plain jane, meaning most things I eat are basic and simple especially if I'm making it. That's not to say I won't try new things, I just like to keep it simple. Some new recipes I do try and if we like them sure, I'll make it again. More than likely I'm this way because I am a picky eater as well. I like the plain taste of coffee with regular cream and sugar most of the time. On occasion I will use a flavored creamer but not on a daily basis.

PeachyDoll, the recipe is the same as for pumpkin pie. The difference is the canned pumpkin is replaced by oven baked sweet potatoes,,scoop out cooked, soft sweet potato and..voila!..you have pumpkin replacement! I've made these and no one could tell the difference.

Many Moons ago there was a shortage of toilet paper. Most of you are too young to remember. We went in any store and shelves were empty. People were hoarding the rolls. Pumpkin shortage I can deal with.
