They missed out the most important factor which is to have a nice long lens. This is how you get the depth of field which blurs out the background. Also means you don't even have to go outdoors, this one was taken without opening the window which would have scared it off:

This one we were outdoors, sitting on the patio drinking kir royales. Fortunately the camera is self focusing.
